Marshmallow Bars

Ingredients: 

300g marshmallows
200g rice cereal
50g butter
120g raisins (or sultanas)
0.5 tsp orange extract
0.5 tsp cinnamon
1 tsp all spice
80g melted white chocolate (Optional for topping)

Notes
 
Store in an airtight container at room temperature for up to 5 days. You can refrigerate to extend freshness, but texture will firm up slightly.

In a large saucepan, melt the butter with the orange extract over low heat.


When almost completely melted, add the marshmallows and continue melting over low heat.


While waiting, combine rice cereal and raisins in a large mixing bowl.


Once the marshmallows have melted, turn off the heat and mix in the spices.


Pour the marshmallow mixture into the rice cereal and mix until fully combined.


Press the mixture down firmly into a lined baking dish.


Melt the white chocolate and drizzle or spread over the top.


Allow to cool completely before slicing into squares.
